i made these bad boys the other day & ev loved them! fi had me
make them for the boys a while ago & i decided to add a little
more to them. they're a tasty treat for lunch and would probably
be great with bacon & sausages (or even a steak?) too!
this recipe is soooo easy & simple, i really enjoy
making them & enjoy it even more when my husband
moans in approval at all the flavours! what is great about
pancakes is that you can add whatever you want to them!
i basically only added cheese & spices but you can add
some veggies & meat too! (i suggest spinach, carrots, &
maybe even some ham!!) cook it up & share your ideas
with me!
ingredients:
for pancakes-
- 1 cup self raising flour
- 1 cup coconut milk
- 1 large egg
- 1/2 cup of sheep cheese
- salt & pepper
- a pinch of parsley & oregano
- butter
toppings -
- 1 or 2 sweet potatoes
- greek or natural yogurt
method:
- preheat the oven to 180c & cover a pan with aluminium foil.
- rinse your sweet potato(es) and with a fork, stab it several times.
- chuck your sweet potato in the over for 45 minutes.
- heat a pan on the stove on medium low.
- mix all your ingredients in a mixing bowl.
- put a large frying pan on medium heat and add butter.
- when the butter has melted and the pan is nice and hot, use a ladle to spoon
the batter into the pan.
- each ladleful will make 1 pancake- they're quite small, so you can cook several
at a time.
- cook for 1 to 2 minutes & use a turner to flip them over when they start to brown
on the bottom and get little bubbles on the top.
- when cooked on both sides, transfer them to a plate, and start again! keep going
until all the batter is used up!
- once your sweet potato is done (which hopefully is after your pancakes are done)
take out of the oven & allow to cool for 2-3 minutes.
- next scoop out all the sweet potato bits, leaving the skin for the compost bin.
- toss sweet potato mash into a bowl & add butter. salt & pepper to taste.
to serve your savoury pancakes:
- butter your bad boys, dollop with your delicious sweet potato mash & yogurt
and sprinkle a little parsley on top!!
